How to Use Use it for your bulk ferment — the stretch-and-fold stage before you shape your dough. The rectangular shape gives you more surface area to work with than a mixing bowl, which makes folding easier, and the volume markings on the side let you actually see how much your dough has risen by, rather than eyeballing it. Two containers stack neatly inside the Folding Proofer, or side by side in the fridge if you're doing a cold bulk ferment.
